Quick and Simple Greek Chicken Sheet Pan Meal
Ingredients Needed

4 skinless, boneless chicken breast halves

1 ½ pounds yellow potatoes, cubed

2 medium red bell peppers, seeded and chopped

½ cup coarsely chopped red onion

2 teaspoons minced garlic

2 tablespoons olive oil

2 medium lemons, cut into wedges

1 tablespoon dried oregano

freshly cracked salt and pepper to taste

½ cup pitted Kalamata olives
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the chicken, potatoes, bell peppers, onions, olive oil, and garlic until evenly coated. Spread the mixture onto a large sheet pan in a single layer. Squeeze lemon wedges over the top, then place the squeezed wedges on the sheet pan. Sprinkle with oregano and season with salt and pepper. Add Kalamata olives on top.

Bake in the preheated oven for about 25 minutes, or until the potatoes are tender and the chicken reaches an internal temperature of 165°F (74°C), with the juices running clear.
