Ramen Burger
Ingredients Needed
-
2 (3 ounce) packages instant ramen noodles, flavor packet discarded
-
2 large eggs
-
salt and ground black pepper to taste
-
¾ pound lean ground beef
-
1 tablespoon soy sauce
-
1 teaspoon sesame oil
-
3 tablespoons vegetable oil, divided
-
3 slices American cheese
-
¼ cup ketchup
-
2 tablespoons chile-garlic sauce (such as Sriracha)
-
1 ½ cups arugula
-
3 large eggs
Instructions
Bring a pot of water to a boil, then add the ramen noodles. Cook, stirring occasionally, for about 3 minutes, or until the noodles are tender. Drain and let the noodles cool slightly before using them for the burger buns.
Crack 2 eggs into a bowl and season with salt and pepper. Stir the cooked noodles into the eggs, making sure they are well coated. Divide the noodles into 6 portions and place each in a ramekin or small bowl. Cover the noodles with plastic wrap, pressing a second bowl on top to flatten them. Refrigerate for about 20 minutes until firm.
Combine the ground beef, soy sauce, and sesame oil in a bowl. Divide the mixture into three equal portions and shape each into a patty.
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Gently invert each ramekin of ramen, tapping the bottom to release the noodles while keeping their shape intact.
Fry each ramen patty in the hot oil without disturbing the noodles, cooking until golden brown, about 3 minutes. Flip and cook for another 3 to 5 minutes, until the second side is crisp and the noodles are slightly softer on the other side. Remove the ramen buns and set them on a plate with the crispy side up.
Heat another tablespoon of vegetable oil in the same skillet over medium heat. Cook the beef patties for 3 to 5 minutes on each side, until the center is lightly pink. Use an instant-read thermometer to ensure the internal temperature reaches 140°F (60°C). Add a slice of American cheese to each burger and cook for another minute until melted.
In a small bowl, combine ketchup and chile-garlic sauce, then spread the mixture over the crispy side of each ramen bun. Top 3 of the ramen buns with arugula, then place the burgers on top of the greens.
Heat about 1 teaspoon of oil in a small skillet over medium-high heat. Fry the remaining eggs, one at a time, adding oil as needed, cooking until the yolk is nearly set, about 1 minute per side. Place each egg on top of a patty and cover with the remaining ramen bun to complete the burger.
Recipe Tips
For a simple weight, you can place a can of soup on top of the stacked ramen bowls to help them flatten. If you want more flavor, try using one of the ramen seasoning packets instead of salt and pepper when mixing the noodles.
