Ramen Carbonara Delight

2 slices bacon, chopped

½ cup chopped onion

2 (3 ounce) packages ramen noodles (flavor packets discarded)

½ cup frozen peas

1 egg

½ cup shredded Parmesan cheese

¼ teaspoon kosher salt

1 pinch red pepper flakes

Chopped fresh parsley
Instructions
Fry bacon in a large skillet over medium heat until crisp, approximately 5 minutes. Remove and drain on paper towels. In the remaining bacon fat, cook the onion until softened, about 3 to 5 minutes.
In the meantime, prepare the ramen in a saucepan as per package instructions, adding peas during the final minute of cooking. Save 1/2 cup of the cooking water before draining.
In a bowl, whisk together the egg, Parmesan, onion, bacon drippings, salt, and red pepper. Add the hot ramen and crispy bacon, tossing everything together to coat. Gradually add the reserved cooking water to achieve a creamy texture. Garnish with parsley before serving.
