Chicken and Spinach Quiche

1 cup shredded Cheddar cheese

1 (9 inch) unbaked pastry shell

1 cup diced cooked chicken

1 cup chopped fresh spinach

½ cup chopped sweet onion (such as Vidalia®)

3 large eggs

¾ cup half-and-half

½ cup mayonnaise

¼ teaspoon salt

⅛ teaspoon ground black pepper

1 pinch salt-free seasoning blend (such as Mrs. Dash), or to taste

1 pinch herbes de Provence, or to taste
Instructions

Preheat your oven to 350°F (175°C).

Place 1/4 cup of Cheddar cheese in the bottom of the pie crust. In a medium bowl, mix together the chicken, spinach, remaining 3/4 cup of Cheddar cheese, and the onion. Transfer the mixture into the prepared pie crust.

In a separate bowl, whisk together eggs, half-and-half, mayonnaise, salt, pepper, seasoning mix, and herbes de Provence until smooth. Pour the mixture over the chicken and spinach in the crust.

Bake the quiche in the preheated oven for 35 to 40 minutes or until a knife inserted into the center comes out clean. Let it rest for 15 minutes before slicing and serving.
