4 red potatoes, cut into large cubes

1 (16 ounce) package carrots, cut diagonally into bite-size pieces

1 stalk celery, cut diagonally into bite-size pieces

1 sweet onion, sliced - divided

1 (4.5 pound) whole chicken

salt and ground black pepper to taste

garlic powder, or to taste

½ cup cubed margarine, divided

1 large lemon, sliced

1 teaspoon minced garlic

1 stalk celery, cut into 3 pieces

1 ⅔ tablespoons minced garlic
Instructions

Preheat the oven to 385°F (196°C).

In a large bowl, drizzle olive oil over the potatoes, carrots, celery pieces, and 3/4 of the sliced onions. Toss to coat, then set aside the remaining onion. Transfer the oiled vegetables into a large cast-iron skillet.

Rinse the chicken and pat it dry with paper towels. Generously season the chicken, both inside and out, with salt, black pepper, and garlic powder. Stuff the chicken with the remaining onion slices, 1/4 cup margarine, lemon slices, minced garlic, and large pieces of celery.

Place the seasoned chicken on top of the oiled vegetables in the skillet. Dot the remaining margarine and minced garlic over the vegetables and chicken.

Roast the chicken and vegetables in the preheated oven for about 1 hour 45 minutes, or until the skin is golden and crispy, the vegetables are tender, and a thermometer inserted into the thickest part of the chicken thigh reads 165°F (75°C). Let the chicken rest for 10 minutes before carving and serving with the vegetables.
