Roasted Balsamic Brussels Sprouts with Feta and Walnuts

1 pound Brussels sprouts, trimmed and halved

1 large red onion, chopped

6 cloves garlic, chopped

⅓ cup balsamic vinegar

¼ cup olive oil

2 tablespoons maple syrup

salt and ground black pepper to taste

¼ cup walnuts

¼ cup sweetened dried cranberries

2 ounces crumbled feta cheese
Instructions

Preheat the oven to 450°F (230°C).

In a large mixing bowl, combine Brussels sprouts, red onion, and garlic. Drizzle with balsamic vinegar, olive oil, and maple syrup, then toss to coat. Season with salt and black pepper. Transfer the mixture to a baking sheet.

Roast in the preheated oven for about 40 minutes, or until the Brussels sprouts are tender and the sauce has thickened.

Once roasted, transfer the Brussels sprouts and sauce to a large serving bowl. Stir in walnuts, cranberries, and feta cheese until well combined.
