Roasted Beets and Sweet Potatoes

6 medium beets, peeled and cut into chunks

2 ½ tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon kosher salt

1 teaspoon ground black pepper

1 teaspoon sugar

3 medium sweet potatoes, cut into chunks

1 large sweet onion, chopped
Instructions
Preheat your oven to 400°F (200°C).
Drizzle beets with 1/2 tablespoon of olive oil and toss to coat. Arrange them in a single layer on a baking sheet.
In a large resealable plastic bag, combine the remaining 2 tablespoons of olive oil, garlic powder, salt, pepper, and sugar. Add the sweet potatoes and onions to the bag, seal it, and shake to evenly coat the vegetables with the oil mixture.
Roast the beets in the preheated oven for 15 minutes. Then, combine the sweet potato mixture with the beets on the baking sheet. Continue roasting, stirring every 20 minutes, until the vegetables are tender, about 45 minutes.
