Rosemary Infused Roast Leg of Lamb

¼ cup honey

3 cloves garlic, minced

2 tablespoons chopped fresh rosemary

2 tablespoons prepared Dijon-style mustard

1 teaspoon lemon zest

1 teaspoon freshly ground black pepper

5 pounds whole leg of lamb

1 teaspoon coarse sea salt
Instructions
Combine honey, garlic, rosemary, mustard, lemon zest, and a dash of pepper in a small bowl. Place the lamb in a shallow dish and generously coat it with the mixture. Cover the dish with plastic wrap and refrigerate for 8 hours to overnight for marinating.
Preheat your oven to 450°F (230°C). Place the lamb on a rack inside a roasting pan and season with salt to taste.
Roast the lamb in the preheated oven for 20 minutes. Then lower the temperature to 400°F (200°C) and continue roasting for an additional 55 to 60 minutes for medium-rare. Use an instant-read thermometer to check the center, which should read at least 120°F (50°C). Allow the lamb to rest for 10 minutes before slicing.

The USDA advises cooking all raw lamb steaks, chops, and roasts to a minimum internal temperature of 145°F (63°C), measured with a food thermometer, before removing the meat from the heat source.
