Salmon Sarciado: A Savory Delight

Ingredients Needed

3 tablespoons cooking oil, divided

2 salmon steaks

salt and pepper to taste

1 onion, chopped

2 cloves garlic, crushed

2 tomatoes, diced

1 large egg, beaten
Instructions

Heat 2 tablespoons of oil in a pan over medium heat. Season the salmon steaks with salt and pepper. Quickly fry the salmon for about 2 minutes on each side until lightly browned. Remove the salmon and set aside.

Add the remaining 1 tablespoon of oil to the same pan. Sauté the onion and garlic until aromatic, about 5 minutes. Stir in the diced tomatoes, seasoning with salt and pepper. Let it cook until the tomatoes release their juices and form a sauce, about 5 more minutes.

Return the salmon to the pan and simmer in the tomato sauce for 10 minutes, or until the fish flakes easily with a fork. Mix in a beaten egg and stir until combined. Serve hot.
