San Francisco-Style Pork Chops
Ingredients Required

1 tablespoon vegetable oil

4 (3/4 inch-thick) boneless pork chops, trimmed

1 clove garlic, minced

¼ cup beef broth

¼ cup soy sauce

2 tablespoons brown sugar

2 teaspoons vegetable oil

¼ teaspoon red pepper flakes

2 teaspoons cornstarch

2 tablespoons water
Cooking Instructions
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Brown the pork chops in the hot oil, cooking for about 5 minutes per side. Remove the chops from the skillet, setting them aside while keeping the oil in the pan.
Sauté garlic in the reserved drippings until fragrant, about 1 minute. In a bowl, whisk together beef broth, soy sauce, brown sugar, 2 teaspoons of vegetable oil, and red pepper flakes, dissolving the brown sugar. Return the pork chops to the skillet and pour the soy sauce mixture over them. Bring the sauce to a boil, then cover the skillet and reduce the heat to low. Let the chops simmer until tender, 30 to 35 minutes, turning once halfway through the cooking time.
Remove the chops and place them on a serving platter. In a small bowl, whisk cornstarch and water until smooth, then stir it into the pan juices. Simmer the sauce for about 5 minutes until it thickens, then pour it over the pork chops before serving.
Chef’s Tip
I prefer a little extra red pepper for an added kick. It really brings out the flavor!
I often skip the 2 teaspoons of vegetable oil in the sauce, as the leftover oil in the pan is usually plenty.
This recipe also works well with thinner pork chops—just reduce the simmering time to prevent them from becoming tough.
