Heat oil in a skillet over high heat. Cook the chicken pieces in the hot oil for about 6 to 7 minutes, ensuring not to overcook them!

Preheat your oven to 425°F (220°C).

To assemble the pizzas: Spread 1/4 of the peanut sauce on each pita. Top with 1/4 of the sautéed chicken and 1/4 of the chopped scallions. Place a slice of cheese on top of each. Arrange on a lightly greased baking sheet and bake in the preheated oven for 10 to 12 minutes, or until the cheese is melted and bubbly. Let them cool for 1 to 2 minutes before slicing with a pizza cutter.
