Sausage and Mushroom Quiche

1 pound ground pork breakfast sausage

½ cup chopped fresh parsley

3 large eggs

1 cup half-and-half cream

½ cup grated Parmesan cheese

1 (9-inch) unbaked pie crust
Instructions

Preheat your oven to 400°F (200°C). Prepare the mushrooms by trimming off the stems and halving them if they are large.

Crumble the sausage into a large skillet, then add the mushrooms. Cook over medium-high heat until the sausage is browned and all the mushroom liquid has evaporated. Drain the excess grease, then stir in the parsley.

In a large bowl, beat the eggs and whisk in the cream, cheese, and salt. Pour this mixture into the sausage-mushroom blend and mix well. Transfer the mixture into the prepared pie shell.

Bake in the preheated oven for 25 to 30 minutes, until the crust is golden and the filling is firm. Let the quiche rest briefly before serving.
