Savory Pork Chops with Sauerkraut

4 (3/4-inch thick) pork chops

16 ounces sauerkraut

1 onion, thinly sliced

2 tablespoons apple juice

2 cloves garlic, minced

1 teaspoon caraway seeds

salt and pepper to taste
Instructions

Heat oil in a large skillet over medium heat. Brown the pork chops on all sides, then remove from the pan.

Add sauerkraut, onions, apple juice, garlic, and caraway seeds to the skillet. Season with salt and pepper, and sauté for 3 to 4 minutes. Place the browned pork chops on top of the sauerkraut mixture, cover, and reduce the heat to low. Cook for about 20 minutes until the pork is fully cooked through, and a thermometer reads at least 145°F (63°C) at the center.
