Scarpariello-Style Chicken

1 ¼ pounds skinless, boneless chicken breast halves

3 tablespoons all-purpose flour

2 tablespoons olive oil

2 teaspoons butter

2 tablespoons shallots, minced

2 cloves garlic, minced

1 cup water

½ cup white wine

1 cube chicken bouillon

½ teaspoon dried rosemary, crushed

¼ teaspoon salt

1 pinch ground black pepper

Slice chicken breasts into strips, each about 1 x 3 inches, and coat them with flour.

In a 10-inch skillet, heat a combination of oil and butter. Add the chicken pieces and cook, turning occasionally, until golden brown on all sides (about 3 to 4 minutes). Using tongs, remove the chicken and set it aside to keep warm.

In the same skillet, add shallots and garlic. Sauté for about 1 minute, or until softened.

Pour in water, wine, broth mix, and seasonings. Stir well and cook, stirring often, until the liquid has reduced by half (about 3 to 4 minutes).

Add the chicken back to the skillet and cook until the sauce has thickened and the chicken is heated through (about 2 to 3 minutes).
