Scrumptious Turkey and Spinach Lasagna

9 whole-wheat lasagna noodles

1 teaspoon olive oil

½ cup chopped onion

1 pound ground turkey breast

3 cups tomato sauce

½ cup sliced fresh mushrooms

3 tablespoons Italian seasoning

¼ teaspoon ground black pepper

¼ teaspoon garlic powder

6 cups chopped fresh spinach

2 cups fat-free ricotta cheese

¼ teaspoon ground nutmeg

2 cups shredded mozzarella cheese
Instructions

Preheat the oven to 375°F (190°C).

Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles for 8-10 minutes. Drain the noodles and rinse them under cold water.

Heat olive oil in a skillet over medium heat. Add onion and cook until softened and translucent, about 2 minutes. Stir in ground turkey and cook for another 5-7 minutes, breaking up large chunks. Mix in tomato sauce, mushrooms, Italian seasoning, black pepper, and garlic powder. Let simmer for 2 minutes and adjust seasoning to taste.

In a large bowl, combine spinach, ricotta, and a pinch of nutmeg.

To assemble, place 3 noodles in the bottom of a greased 9x13 inch baking dish. Spread 1/3 of the ricotta mixture, followed by 1/3 of the turkey mixture, and 1/3 of the mozzarella. Repeat the layers, finishing with the remaining mozzarella. Bake in the preheated oven for 25 minutes. Let it cool for 5 minutes before serving.
Cooking Tip
For an extra kick, add 1 tablespoon of crushed red pepper.
