Seitan: A Wheat-Based Vegan Meat Substitute

1 cup vital wheat gluten

4 ½ cups vegetable broth, divided

¼ cup liquid aminos (such as Bragg®)

3 tablespoons nutritional yeast

1 tablespoon olive oil

1 ½ teaspoons minced garlic

¼ cup tamari
Cooking Instructions

In a bowl, combine wheat gluten, 1/2 cup of broth, liquid aminos, nutritional yeast, oil, and garlic. Stir until the mixture forms a ball. Knead the dough until it achieves a firm, rubbery texture. Split the dough into 3 portions and shape each into 1/2-inch thick patties.

In a large pot, mix the remaining 4 cups of vegetable broth, water, and tamari. Bring the mixture to a boil. Gently drop the patties into the boiling broth, cover the pot, and let it return to a boil. Slightly tilt the lid to allow steam to escape and lower the heat to simmer. Cook for about 1 hour, turning occasionally, until the patties firm up.

Once done, remove the pot from heat and uncover. Let the patties cool in the broth for 15 minutes before serving.
Cook's Tips
This recipe yields approximately one pound of seitan. Store the seitan along with its broth in an airtight container in the fridge. Don't throw away the broth—it's perfect for creating a flavorful soup base!
