Shrimp Simmered in Beer

1 large onion, chopped

5 pounds large shrimp in shell (21 to 25 per lb), peeled and deveined

3 (12 fluid ounce) bottles beer
Instructions

In a large pot, melt the butter over medium-high heat. Add the onions and cook until soft and translucent, about 5 minutes. Stir in the salt and shrimp. Pour the beer over the shrimp, and let it simmer until the shrimp turn pink. Remove from heat, and let the shrimp rest for at least 30 minutes. Serve hot, or chill and reheat before serving.
