Prepare all your ingredients.

Place the rice noodles in a large bowl, cover with warm water, and let them soften for 8 to 10 minutes. Drain and set aside.

In the meantime, heat oil in a wok or large skillet over medium-low heat. Add the onions and garlic; cook and stir until the onions are tender, about 3 to 5 minutes. Add chicken, cabbage, carrots, and soy sauce. Continue cooking until the cabbage starts to soften.
