Simple and Quick Vegetable Curry

Ingredients List

1 tablespoon olive oil

1 onion, chopped

2 cloves crushed garlic

2 ½ tablespoons curry powder

2 tablespoons tomato paste

1 (14.5 ounce) can diced tomatoes

1 cube vegetable bouillon

1 (10 ounce) package frozen mixed vegetables

1 ½ cups water

salt and pepper to taste

2 tablespoons chopped fresh cilantro
Cooking Instructions

In a large pot, heat some oil over medium-high heat. Sauté onions and garlic until golden, then mix in curry powder and tomato paste. Cook for 2-3 minutes.

Add tomatoes, vegetable bouillon cube, mixed veggies, water, salt, and pepper. Let it simmer for around 30 minutes until vegetables are soft and tender (not crunchy). Top with fresh cilantro just before serving.
