Simple Butternut Squash Ravioli

1 cup mashed, cooked butternut squash

1 (16 ounce) package round wonton wrappers

Instructions
Combine the cooked butternut squash in a bowl. Season with salt, black pepper, and a pinch of cayenne. Add in mascarpone cheese, egg yolk, and 1/3 cup of Parmesan cheese. Mix until the filling is creamy and smooth.
Lay a wonton wrapper on a flat surface. Dampen your fingertip with water and trace it along the outer edges of the wrapper. Place about a teaspoon of the filling in the center. Fold the wrapper in half to form a crescent shape, pressing the edges to seal. Continue with the remaining wrappers.
Heat a large skillet over medium-low heat. Add butter and a whole garlic clove with the skin on. Meanwhile, bring a pot of salted water to a boil.
Gently drop the filled ravioli into the boiling water in batches, cooking until they rise to the surface, about 2 minutes. Remove the ravioli and transfer them to the skillet. Increase the heat to medium-high and cook for an additional 2–3 minutes, allowing the ravioli to absorb the garlic flavor. Finish with a sprinkle of chopped sage, freshly ground black pepper, and extra Parmesan cheese to taste.
