Simple Irish Colcannon

2 pounds potatoes, peeled and cubed

1 head cabbage, chopped

1 bunch green onions, chopped

¼ cup butter, softened

½ cup half-and-half cream

salt and black pepper to taste
Instructions

Combine potatoes, cabbage, and green onions in a large saucepan. Fill with water, bring to a boil, then reduce the heat, cover, and simmer until the potatoes are soft, about 20 minutes.

Drain the vegetables, then transfer them to a large bowl. Mash the potatoes and vegetables together with butter, using a fork, until the mixture is chunky. Gradually add half-and-half while mashing. Season with salt and pepper to taste.
