Simple Pierogi Casserole

Ingredients Needed

3 pounds sauerkraut

1 onion, chopped

1 pound uncooked rotini pasta

1 pound fresh mushrooms, chopped

½ pound butter

2 (10.75 ounce) cans condensed cream of mushroom soup
Instructions

In a large skillet, combine sauerkraut and onions over medium-low heat, adding enough water to cover. Let it simmer for 1 hour, or until most of the liquid has evaporated.

Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta.

In a separate skillet, sauté the mushrooms in 2 tablespoons of butter over medium heat for about 5 minutes.

Stir in the remaining butter, cooked pasta, and cream of mushroom soup into the sauerkraut mixture. Continue cooking and stirring for 15 minutes, or until everything is heated through.
