Instructions
Preheat the oven to 500°F (260°C) and gather all the ingredients for the roast.

Cream together butter and garlic in a bowl.

Make several incisions in the rib-eye using a sharp knife. Coat the meat with the butter mixture and season generously with salt and pepper. Place the rib-eye fat-side up in a roasting pan.

Roast in the preheated oven for 20 minutes.

Lower the heat to 325°F (165°C) and continue roasting until the rib-eye is pinkish-red and juicy in the middle, about 1 1/2 to 2 hours. For medium, an instant-read thermometer should read 145°F (63°C) at the center.
