Simple Stuffed Zucchini

½ pound ground beef

1 large zucchini, ends trimmed

1 (16 ounce) jar spaghetti sauce

½ cup grated Parmesan cheese

½ cup bread crumbs

½ (6 ounce) can sliced black olives, drained

2 cloves garlic, minced

1 cup shredded mozzarella cheese
Cooking Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, heat over medium-high. Cook the ground beef, stirring occasionally, until browned and crumbled, about 5 to 7 minutes. Drain excess fat, then transfer the beef to a large mixing bowl.

Cut the zucchini in half lengthwise. Use a spoon to scoop out the flesh, leaving about 1/2 inch of zucchini shell. Chop the scooped-out flesh and add it to the beef mixture in the bowl.

Stir in spaghetti sauce, Parmesan cheese, breadcrumbs, black olives, and garlic until well combined. Gently stuff each zucchini half with the filling. Place the stuffed zucchini halves into a baking dish and cover tightly with foil.

Bake in the preheated oven for 45 minutes. Once done, remove the dish from the oven. Turn on the broiler and adjust the oven rack to within 6 inches of the heat source.

Uncover the dish and sprinkle each zucchini half with 1/2 cup of shredded mozzarella cheese. Broil for about 5 minutes, until the cheese is melted, browned, and bubbly.
