Slow Cooker Carolina-Style BBQ Pulled Pork

1 (5 pound) bone-in pork shoulder roast

1 tablespoon kosher salt

½ teaspoon ground black pepper, or to taste

1 ½ cups apple cider vinegar

2 tablespoons brown sugar

1 ½ tablespoons hot pepper sauce

2 teaspoons cayenne pepper

2 teaspoons crushed red pepper flakes
Instructions
Place the pork shoulder in the slow cooker and season with salt and pepper. Add the vinegar around the pork. Cover the cooker and cook on low for 12 hours, until the pork easily shreds into tender strands.

After removing the pork from the slow cooker, discard any bones and strain the liquid, keeping 2 cups. Shred the pork with tongs or two forks, then return it to the slow cooker.

Stir in brown sugar, hot pepper sauce, cayenne, and red pepper flakes into the reserved liquid. Pour over the pork in the slow cooker and mix well.
