Slow Cooker Chicken Tinga
Ingredients

4 skinless, boneless chicken breast halves

1 onion, chopped

1 (15 ounce) can tomato sauce

1 (7 ounce) can chipotle chile peppers in adobo sauce, chopped and seeded

2 fresh jalapeno peppers, seeded and chopped

2 cloves garlic, minced

1 teaspoon ground oregano
-
1 teaspoon ground cumin
-
1 teaspoon chili powder
-
¼ teaspoon red pepper flakes

¾ (1 pound) chorizo sausage
Directions

Combine chicken, onion, tomato sauce, chipotle peppers in adobo sauce, jalapenos, garlic, oregano, cumin, chili powder, and red pepper flakes in a slow cooker.

Cook on low for 2 to 3 hours until the chicken is fully cooked and no longer pink. Shred the chicken with two forks and return it to the slow cooker.

In a large skillet, cook the chorizo sausage over medium-high heat, stirring until browned and crumbly, about 5 to 10 minutes. Drain excess fat and add the cooked chorizo to the slow cooker with the chicken.

Continue cooking on low for an additional 45 minutes to 1 hour.
Chef’s Tip
Cooking times are approximate. My large slow cooker tends to cook quickly, so the chicken only takes around 2 hours. Your results may vary based on your slow cooker model.
