16 ounces fresh lo mein noodles, cooked according to package directions

In a 6-quart slow cooker, mix together honey, soy sauce, garlic, dark soy sauce, oyster sauce, Sriracha, Shaoxing wine, ginger, sesame oil, and salt. Add the chicken thighs, arranging them in a single layer over the honey sauce.

Cover and cook until the chicken is fully tender, approximately 3 hours on HIGH or 5 hours on LOW.

Mix water and cornstarch in a small bowl until smooth. Remove the chicken from the slow cooker and shred it with a fork on a cutting board.

With the slow cooker set to HIGH, stir in the cornstarch mixture and cook for another 30 seconds, until slightly thickened. Turn off the slow cooker. Add the shredded chicken back in, along with the cooked noodles and scallions; toss to combine.
