Slow Cooker Pork Loin with Brown Sugar and Sweet Potatoes

¼ teaspoon Chinese five-spice powder

1 (3 pound) pork loin roast

2 medium sweet potatoes, peeled and cut into bite-size pieces

½ cup brown sugar

3 tablespoons butter

salt and ground black pepper to taste
Instructions
Combine the pork rub seasoning with Chinese five-spice powder in a small bowl, then rub the mixture evenly over the pork roast.
Layer sweet potatoes at the bottom of the slow cooker, then top with brown sugar and butter. Place the pork roast on top and season with salt and pepper.
Cook on Low for 6 to 7 hours until the roast is tender and easily pierced with a fork. The internal temperature should reach at least 145°F (63°C) when checked with a meat thermometer.

Chef's Tip
Do not add any water to the slow cooker.
If the pork isn't fully cooked after 7 hours, switch the cooker to High for an additional 45 minutes.
