Slow Cooker Pork with Sauerkraut and Apples

6 thick-cut pork chops

4 tart apples, peeled and sliced

1 large onion, sliced

1/2 cup water, or more as needed to cover

1 quart sauerkraut

½ teaspoon fennel seed, or to taste
Instructions

Heat a large skillet over medium-high heat. Brown the pork chops for 2-3 minutes per side. Drain excess grease.

Layer apples and onions in the bottom of a slow cooker, then place the browned pork chops on top. Add enough water to cover the bottom of the crock.

Cook on High for 3 hours or on Low for 6 hours. Afterward, stir in the sauerkraut and fennel seeds, and cook for an additional hour.
Cooking Tip
Caraway seeds can be substituted for fennel seeds if preferred.
