Smoked Corn on the Cob with Cilantro Lime Butter
Ingredients

4 ears corn on the cob, silks removed

mesquite wood chips

2 tablespoons butter, melted

1 tablespoon chopped fresh cilantro

1 lime, zested

½ lime, juiced

1 teaspoon smoked paprika

salt and ground black pepper to taste
Instructions

Gather all the ingredients you’ll need.

Soak the corn, still in their husks, in a large pot of water for 2 hours. In a separate container, soak the wood chips for about 30 minutes.

Preheat the smoker to 250°F (120°C). Arrange the corn, unstacked, on wire racks and place them in the smoker. Follow the manufacturer's instructions for adding wood chips. Smoke the corn for 60 to 75 minutes, or until the corn reaches your desired tenderness.

In a small bowl, mix together butter, cilantro, lime zest, lime juice, and paprika. Once the corn has smoked, peel back the husks and brush the corn with the butter mixture. Season with salt and pepper to taste.
