Smoked Gouda and Spinach-Stuffed Pork Chops

8 slices smoked Gouda cheese

3 tablespoons horseradish mustard

Instructions
Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with cooking spray.
Place each pork chop flat on a cutting board. With a sharp knife, carefully slice a deep pocket into the side of each chop, keeping three edges intact. Stuff the pocket with a generous amount of spinach, followed by the cheese of your choice.
Pour panko crumbs into a shallow dish. Spread a thin layer of horseradish mustard over each pork chop, then roll them in the crumbs until fully coated. Arrange the coated chops in the prepared baking dish and sprinkle with Creole seasoning.
Bake in the preheated oven for approximately 45 minutes, or until the pork chops are golden brown and crispy. To ensure they are fully cooked, the internal temperature should reach at least 145°F (63°C) when checked with a meat thermometer.

Helpful Tips
You can replace panko crumbs with regular bread crumbs if preferred for a different texture or flavor.
