Soulful Smothered Chicken Delight

1 whole chicken, cut into pieces

Instructions
Prepare all the ingredients before you begin cooking.
In a large skillet, melt butter over medium-high heat. Season the chicken pieces with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Pour 3/4 cup of flour into a shallow dish. Coat the chicken pieces in the flour, then add them to the skillet. Brown the chicken on all sides. Set the chicken aside and drain the skillet, leaving about 1 tablespoon of butter in the pan.
Lower the heat to medium-low and add onions, carrots, celery, and garlic to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
Sprinkle in 3 tablespoons of flour and cook for another 5 minutes. Pour in the chicken broth, season with cayenne pepper, and add the remaining salt and pepper. Bring the mixture to a boil, then reduce the heat to low.
Return the chicken to the skillet, cover, and simmer until the chicken is fully cooked, the juices run clear, and the gravy has thickened, about 30 minutes.
