Fill a large pot with water and immerse the sous vide precision cooker. Set the temperature to 170°F (77°C), following the manufacturer's instructions.

In a blender, combine eggs, cottage cheese, heavy cream, and salt. Blend for 15-20 seconds until smooth and fully combined.

Lightly spray mason jars with cooking spray. Pour the egg mixture into each jar, filling them evenly. Secure the lids gently—do not over-tighten to avoid bursting during the sous vide process.

Place the jars into the preheated water bath and cook for 55 minutes. After the timer goes off, carefully remove the jars and set them on a cooling rack. To serve, run a knife around the edges and flip the jar onto a plate, or enjoy directly from the jar. Allow any remaining jars to cool, then store in the refrigerator for up to 1 week.
Helpful Tips for the Recipe
For a cheesy twist, blend in 1/2 cup of your preferred shredded cheese with the egg mixture. You can also layer 1 tablespoon of cooked ingredients at the bottom of each mason jar before adding the egg mixture. Popular combinations include broccoli and cheddar, ham and Swiss, or roasted red peppers and feta.
To reheat, use a microwave on low (30% power) for about 1 minute, or warm in a sous vide bath for 10 to 15 minutes at 150°F (65°C).
