Southern-Style Grits Casserole

3 cups shredded Cheddar cheese, divided

1 pound ground pork sausage

Instructions
Preheat your oven to 350°F (175°C) and lightly grease a large baking dish.
Bring a pot of water to a boil in a large saucepan. Stir in the grits, then lower the heat, cover, and let it simmer until the liquid is absorbed, about 5 minutes. Stir in 2 cups of Cheddar cheese and half of the butter until melted.
In a skillet, cook the sausage over medium-high heat until browned and crumbled, about 5 to 7 minutes. Drain the excess fat and stir the sausage into the grits mixture.
In a bowl, whisk together the eggs and milk. Pour this mixture into the skillet where the sausage was cooked. Lightly scramble the eggs over medium-low heat, then fold them into the grits mixture.
Transfer the grits mixture into the prepared baking dish. Dot the top with the remaining butter, sprinkle with the last cup of Cheddar cheese, and season with salt and pepper to taste.
Bake the casserole in the preheated oven for about 30 minutes, or until the top is lightly browned.
