Spaetzle, Sauerkraut, and Sausage Bake

1 ⅓ cups all-purpose flour

2 slices bacon, diced

½ large onion, chopped

1 small Gala apple, cored and chopped

2 tablespoons brown sugar

1 (16 ounce) package sauerkraut

1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces
Instructions

Preheat the oven to 350°F (175°C). Grease a metal colander with oil.

In a bowl, whisk together the flour and salt. Add eggs and water, then pour the mixture into the flour. Stir until a dough forms.

Bring a pot of water to a boil. Place the dough into the oiled colander, and set it over the boiling water. Use a spatula to push the dough through the colander’s holes into the water. Stir the spaetzle as they cook. When they float to the surface (about 5 minutes), scoop them out and place them in an ungreased 9x9-inch baking dish.

Place the bacon in a skillet over medium heat. Cook, stirring often, until the bacon crisps up, about 8 minutes. Remove the bacon and set aside, leaving the drippings in the pan. In the same pan, sauté the onions until browned, about 10 minutes.

In a large skillet, melt butter over medium heat. Add apple and brown sugar, cooking until the apple softens, about 5 minutes. Add the bacon, onions, and sauerkraut to the skillet and stir frequently until the flavors meld, about 5 minutes. Pour the sauerkraut mixture over the spaetzle in the baking dish.

Place the kielbasa pieces in a microwave-safe dish and heat on high for 2 to 3 minutes, until the sausage is hot and no longer pink. Add the sausage to the casserole dish.

Bake in the preheated oven for about 15 minutes, or until the casserole is bubbling.
