Spicy Acapulco Chicken

Ingredients List

2 large skinless, boneless chicken breast halves - cut into bite-size pieces

1 tablespoon chili powder, divided

salt and pepper to taste

1 tablespoon olive oil

1 cup chopped green bell pepper

½ cup chopped onion
-
2 jalapeno peppers, seeded and minced

1 large tomato, cut into chunks

10 drops hot pepper sauce
Cooking Instructions

Coat the chicken with 1/2 tablespoon of chili powder, salt, and pepper. Heat oil in a large pan over medium-high heat and cook the chicken for 3 to 4 minutes, or until it is fully cooked. Remove the chicken from the pan and set aside to keep warm.

In the same pan, sauté the bell peppers and onions until soft. Add the jalapeños, tomatoes, remaining chili powder, and hot sauce. Stir and cook for another 3 to 5 minutes. Return the chicken to the pan and stir everything together for an additional 2 minutes.
