Spicy Fish Tacos with Crispy Corn Salsa

2 cups cooked corn kernels

½ cup diced red onion

1 cup peeled, diced jicama

½ cup diced red bell pepper

1 cup fresh cilantro leaves, chopped

1 lime, juiced and zested

2 tablespoons cayenne pepper, or to taste

1 tablespoon ground black pepper

2 tablespoons salt, or to taste

6 (4 ounce) fillets tilapia

2 tablespoons olive oil

12 corn tortillas, warmed

2 tablespoons sour cream, or to taste
Cooking Instructions
Heat the grill to high temperature.
In a medium-sized bowl, combine corn, red onion, jicama, red bell pepper, and cilantro. Add lime juice and zest, then mix well.
In a small bowl, mix cayenne pepper, black pepper, and salt together.
Lightly coat each fillet with olive oil, then season with the spice mixture to taste.
Place the fillets on the grill, cooking for 3 minutes on each side. For each taco, layer two corn tortillas with the grilled fish, a dollop of sour cream, and a generous spoonful of corn salsa.
