Spicy Jerk Chicken Wings

Cooking Instructions
In a blender, combine yellow onion, habanero peppers, green onions, lime juice, soy sauce, garlic, fresh thyme, brown sugar, oil, salt, black pepper, allspice, dried thyme, cinnamon, cumin, and nutmeg. Blend until the marinade is completely smooth.
Place the chicken drumettes in a large bowl. Pour the marinade over the chicken and toss to ensure they are evenly coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 8 hours or overnight.
Preheat the oven to 450°F (230°C). Line a baking sheet with aluminum foil and lightly coat it with cooking spray.
Arrange the marinated chicken evenly on the prepared baking sheet, reserving the remaining marinade in the bowl.
Bake in the preheated oven for 25 minutes. Brush half of the reserved marinade onto the chicken, flip them over, and bake for an additional 15 minutes.
Flip the chicken again and brush with the rest of the reserved marinade. Continue baking for another 10 to 15 minutes, or until the chicken is tender and caramelized. The internal temperature should reach 165°F (74°C) when checked with an instant-read thermometer. Let the chicken rest on the baking sheet for 5 minutes before transferring to a serving platter.

Cooking Tip
If you're short on time, you can marinate the wings at room temperature for 2 hours, turning them every 15 minutes, instead of refrigerating overnight.
