Spicy Mexican Meatloaf

2 pounds lean ground beef

1 (1.25 ounce) package taco seasoning mix

1 (16 ounce) can refried beans

4 (8 inch) flour tortillas

¾ cup fresh salsa

½ cup shredded Cheddar cheese
Instructions

Preheat your oven to 350°F (175°C).

In a medium bowl, combine the ground beef with the taco seasoning and set it aside. In a separate saucepan, heat the refried beans over medium-low heat until fully warmed through.

Place the seasoned ground beef mixture onto a large piece of foil. Press it into a square about 1 inch thick. Spread the warmed refried beans evenly over the beef. Lay the flour tortillas on top, trimming the edges to fit. Top the tortillas with salsa and Cheddar cheese, leaving a small border around the edges.

Carefully roll the beef mixture into a log, like a Swiss roll, pressing gently as you go. Seal the edges tightly. Wrap the loaf in the foil and ensure it is sealed.

Bake in the preheated oven for 40 to 45 minutes, or until the center is no longer pink. Cut the loaf in half to check for doneness if needed.
