Spicy Pork Curry Delight

1 pound pork tenderloin, cut into strips

2 ½ tablespoons all-purpose flour

1 cup coconut milk

¼ cup natural peanut butter
Instructions

Preheat your oven to 350°F (175°C).

In a microwave-safe bowl, mix water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt. Microwave for 1 minute, then let it stand until the onion softens and the bouillon dissolves.

While that's happening, heat coconut oil, curry powder, and cayenne pepper in a large, oven-safe skillet over medium heat, stirring frequently, until the oil turns a golden curry color, about 5-6 minutes.

Add the pork tenderloin to the skillet and cook, stirring, until the pork begins to brown. Sprinkle the pork with flour and continue cooking, stirring, until the pork is mostly cooked through but still slightly pink in the middle (about 2-3 more minutes).

Pour in the bouillon mixture, coconut milk, and peanut butter. Bring to a boil while stirring constantly. Cover the skillet and place it in the oven.

Bake for 45 minutes or until the pork is tender and the sauce is bubbling. Once done, remove the skillet from the oven, uncover, and let it rest for about 10 minutes to allow the sauce to thicken.
