Spinach and Feta Stuffed Flounder with Mushrooms

8 large fresh mushrooms, sliced

8 ounces spinach, rinsed and chopped

1 tablespoon crumbled feta cheese

4 (4 ounce) fillets flounder

2 tablespoons water
Instructions

Preheat your oven to 350°F (175°C) and lightly coat an 8-inch baking dish with nonstick spray.

In a medium skillet, spray with nonstick spray and heat over medium. Add mushrooms and cook, stirring occasionally, until the moisture evaporates, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes. Remove from heat, drain any excess liquid, and sprinkle feta cheese over the veggies, mixing it in well.

To prepare the fish, place a quarter of the spinach mixture onto the wide end of each fillet. Roll the fillet around the mixture and secure with toothpicks. Arrange the rolls in the baking dish with the seams facing down. Add a little water to the dish and cover loosely with foil.

Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork and is opaque throughout.
