Cooking Instructions

In a small bowl, whisk together egg whites and whole eggs. Stir in Parmesan, Cheddar, salt, red pepper flakes, garlic powder, nutmeg, and black pepper.

Heat oil in a large skillet over medium heat. Sauté mushrooms, green onions, and bell pepper until softened, about 5 minutes. Add spinach and cook until just wilted, about 1 to 2 minutes. Stir in diced tomato, then pour in the egg mixture. As the eggs begin to set, gently lift the edges to allow the uncooked eggs to flow underneath. Cook for 10 to 15 minutes, until fully set.
