Spinach and Mushroom Quiche

½ yellow onion, sliced

2 ounces crumbled feta cheese

4 ounces shredded Swiss cheese, divided

1 9-inch deep dish prepared pie crust

4 large eggs

¾ cup milk

1 tablespoon chopped fresh parsley

1 teaspoon minced garlic

½ teaspoon salt

½ teaspoon ground black pepper

⅛ teaspoon ground nutmeg
Cooking Instructions

Preheat the oven to 400°F (200°C) and gather all the ingredients.

In a bowl, gently mix the spinach, mushrooms, onion, and feta cheese. Spread the mixture into the prepared pie crust and top with half of the Swiss cheese.

In another bowl, whisk together the eggs, milk, parsley, garlic, salt, pepper, and nutmeg. Pour the egg mixture over the filling, swirling to distribute the seasonings evenly. Top with the remaining Swiss cheese, then place the quiche on a baking sheet.

Bake in the preheated oven for 45 to 50 minutes, or until lightly puffed and golden. A toothpick inserted into the center should come out clean. Let the quiche cool for 30 minutes before serving.
