Spinach, Feta, and Pine Nut Ravioli Filling

Ravioli Ingredients:

1 large egg

1 tablespoon water

2 fresh pasta sheets
Instructions

Prepare the filling: Heat olive oil in a large skillet over medium-high heat. Sauté the spinach until fully wilted, about 2 minutes. Allow to cool, then squeeze out excess moisture from the spinach.

In a blender or food processor, combine the cooked spinach, crumbled feta, and pine nuts. Pulse until you achieve a smooth paste-like consistency.

To assemble the ravioli: In a small bowl, whisk together the egg and water. Brush the egg wash onto a pasta sheet. Spoon small portions of the filling onto the pasta sheet, spacing them about 1 inch apart. Cover with a second sheet of pasta, pressing out the air from around each mound of filling. Seal the edges around the filling by pressing firmly, shaping them into circles, squares, or your preferred form, then cut apart. Use the tines of a fork to crimp the edges and seal each ravioli. Repeat with the remaining pasta sheets.

Bring a large pot of salted water to a rolling boil over high heat. Once boiling, gently add the ravioli, stir lightly, and return to a boil. Cook uncovered until the ravioli float to the surface and the filling is heated through, about 3 to 5 minutes.
