Steak Diane Dish

Ingredients Needed

4 (1/2 pound) strip steaks, cut 1/2 inch thick

salt to taste

freshly ground black pepper to taste

1 teaspoon dry mustard, divided

¼ cup margarine

3 tablespoons lemon juice

2 teaspoons minced fresh chives

1 teaspoon Worcestershire sauce
Instructions

Flatten the steaks to about 1/4 inch thick, then season both sides with salt, pepper, and 1/8 teaspoon of mustard, pressing the seasoning into the meat.

In a large skillet, melt margarine over medium-high heat. Cook two steaks for 2 minutes per side, then place them on a warm serving plate. Repeat with the remaining steaks.

Pour in lemon juice, chives, Worcestershire sauce, and the rest of the mustard into the pan. Bring to a boil, then return the steaks to the skillet, heating them through while coating with the sauce.
