Strawberry Mandarin Salad

½ cup sliced almonds

1 (12 ounce) bag spring mix lettuce

1 (11 ounce) can mandarin oranges, drained

1 cup sliced fresh strawberries

1 cup chopped celery

½ cup chopped red onion

2 teaspoons chopped fresh parsley
Instructions

Preheat a heavy skillet over medium heat. Add almonds and 3 tablespoons of sugar, stirring frequently until the sugar dissolves and coats the almonds. Continue cooking for 15-20 minutes, then set aside to cool.

In a separate bowl, whisk together vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons of sugar, salt, and pepper. In a large mixing bowl, combine the spring mix, mandarin oranges, strawberries, celery, onion, and parsley. Drizzle the dressing over the salad and toss gently to combine. Finally, sprinkle the toasted almonds on top and serve.
