Stuffed Bell Peppers with Tofu and Rice

1 cup uncooked brown rice

2 cups water

2 tablespoons olive oil

1 clove garlic, minced

1 (12 ounce) package extra-firm tofu, drained and diced

1 ¾ cups marinara sauce, divided

2 red bell peppers, halved and seeded

2 orange bell peppers, halved and seeded

2 cups shredded mozzarella cheese

8 slices tomato
Cooking Instructions

Combine rice and water in a pot, bring to a boil. Cover, lower heat, and let it simmer for 45 minutes, or until the rice is tender.

Heat olive oil in a skillet over medium heat. Add garlic and tofu, and cook for about 5 minutes. Stir in 1/4 cup marinara sauce, season with salt and pepper, and continue cooking until the tofu is browned evenly.

Preheat the oven to 350°F (175°C).

Stuff each pepper half with an equal amount of rice. Layer the rice with the remaining marinara sauce and half the cheese. Top with the tofu mixture, and place a slice of tomato on each. Finish by topping with the remaining mozzarella. Arrange the stuffed peppers in a baking dish.

Bake for 25 minutes, or until the cheese is melted and bubbly. Serve each person half of a stuffed pepper.
