Sun-Dried Tomato and Bow Tie Pasta Dish

1 (16 ounce) package bow tie pasta
Cooking Instructions

In a small bowl, combine basil, pine nuts, and 1 tablespoon of olive oil to make the pesto, then set it aside.

Briefly blanch the sun-dried tomatoes by placing them in boiling water for 30 seconds. Drain well and cut into small pieces.

Heat 1/8 cup of olive oil in a large skillet over medium heat. Add garlic and sauté until golden, then stir in the mushrooms and cook until tender. Add the prepared pesto, sun-dried tomatoes, cayenne pepper, and salt, and reduce heat to low to simmer the sauce.

Bring a large pot of salted water to a boil. Cook the bow-tie pasta, stirring occasionally, until it is al dente, about 12 minutes. Drain the pasta and toss with the sauce until fully coated.
Helpful Hints
If you prefer a shortcut, you can substitute homemade pesto with 1/2 bottle of store-bought pesto.
