4 fresh apricots, pitted and cut into wedges

Step-by-Step Instructions

Pat the pork chops dry with paper towels, then season both sides with salt and pepper.

In a skillet, heat olive oil over medium-high heat. Add the pork chops and brown them on both sides for about 5 minutes each. Stir in honey, apricots, and garlic. Cover and cook until the pork is fully tender, about 8 minutes. The internal temperature should reach 145°F (63°C).

Serve the chops topped with apricots and the pan juices. Garnish with fresh parsley.
