Sweet Glazed Candied Yams

6 yellow-fleshed sweet potatoes

1 cup packed brown sugar

½ cup butter

½ cup water

Preheat your oven to 350°F (175°C).

Set up a steamer basket in a large pot and bring about 2 inches of water to a boil. Place the whole sweet potatoes into the basket, cover, and steam until soft, roughly 30 minutes. Drain and let cool.

Peel and cut the sweet potatoes lengthwise into 1/2-inch thick slices. Arrange them in a 9x13-inch baking dish.

In a small saucepan, melt together brown sugar, butter, water, and a pinch of salt over medium heat. Stir until the mixture is bubbling and the sugar has dissolved, then pour it over the potatoes.

Bake the potatoes in the preheated oven for 1 hour, occasionally spooning the brown sugar glaze over the potatoes as they cook.
